Chablis is a small town on the Serein river in the Yonne department, at the northern end of Burgundy. It sits apart from the rest of the region, roughly halfway between the Côte d'Or and Paris. The appellation around the town dates from 1938.

The wine is always white and always Chardonnay. The main vineyards lie on Kimmeridgian subsoil, a mix of limestone, clay and fossilized oyster shells. Basic Chablis rarely sees new oak, so it is lighter and sharper than many Chardonnays: pale, dry, with high acidity and notes of green apple, citrus and flint or wet stone.

There are four levels on a label: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. The Grand Cru comes from seven named vineyards on one slope above the town, and 40 named vineyards hold Premier Cru status. Oak is more common at these two upper levels. The label names the place and not the grape, so you will rarely see the word Chardonnay on the front.

Why Chablis is hard to say

French ch is almost always sh, not the ch of English chair, so the word has no t sound in it. The same letters open Chardonnay, Champagne and Chenin Blanc, so once you have the sh in Chablis you have it for all of them.

Most final consonants in French are silent. The s in Chablis is written but not said, like the s in Beaujolais and the t in Pinot. French also puts the beat on the last sounded syllable, which is why the native form lands on BLEE. English tends to pull the stress forward, and that gives the common English form SHAB-lee.
