What is Botrytis?
Short for Botrytis cinerea, a fungus that can appear on grapes in two forms. As noble rot in favorable conditions, it concentrates sugars and acids while adding honeyed, apricot complexity to produce great dessert wines like Sauternes and Tokaji. As grey rot in wet conditions, it simply damages grapes.
