What is Aszú?
A Hungarian term for botrytis-affected (noble rot) grapes used to make the legendary sweet wines of Tokaj. The shriveled, botrytized berries are collected individually and added to a base wine, historically measured in puttonyos (baskets). The resulting wine offers extraordinary sweetness balanced by electric acidity.
The name means “Dried” in Hungarian.
Tips for saying it
Often heard as ah-SOO.
The accent on ú only makes the vowel long; Hungarian always stresses the first syllable: AH-soo.
Often heard as AH-zoo.
In Hungarian, sz is always a sharp, voiceless s, never a z: AH-soo.
